Spiced Pork Chops with Apple Chutney

Boy has it been crazy at our house. As we continue to clear our land from all the snow damage to our trees, and with spring upon us, I'm eager to start the prep work for my flower beds and garden.  Between my son's school, activities, volunteer work and home projects, we are a wee bit busy.  However, I'm never too busy to prepare a scrumptious meal for my family.

These pork chops are sprinkled in a spice mixture that includes garlic powder, ground coriander and black pepper, and a little kick with the chipotle chile pepper. The sweet chutney is balanced out perfectly by the spicy pork. The result is a scrumptious dish!

Spiced Pork Chops with Apple Chutney

Chutney:
splash of olive oil
3 apples peeled and cubed
1/4 cup dried cranberries
3 tablespoons brown sugar
3 tablespoons cider vinegar
1 teaspoons minced peeled fresh ginger
1/4 teaspoon salt
1/4 teaspoon dry mustard
dash of cinnamon

Pork:
1 teaspoon ground chipotle chile pepper
1/4 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon ground coriander
1/2 teaspoon black pepper
4 (4-ounce) boneless center-cut pork loin chops, trimmed
Olive oil cooking spray

1. To prepare chutney, in a nonstick skillet over medium-high heat add olive oil. Add apple; sauté 4 minutes or until lightly browned. Add cranberries and the next 7 ingredients; bring to a boil. Reduce heat, and simmer 6 minutes or until apples are tender; stir occasionally.

2. To prepare pork, while chutney simmers, heat a grill pan over medium-high heat. Combine chipotle and next 4 ingredients; sprinkle over pork. Coat grill pan with cooking spray. Add pork to pan; cook 4 minutes on each side or until done. Serve with chutney.

Fresh green beans are a complement to the meal. Heat 2 teaspoons olive oil in a large nonstick skillet over medium-high heat. Add green beans to pan; cook 3 minutes, stirring occasionally. Stir in salt and black pepper to taste, and 2 thinly sliced garlic cloves; cook 5 minutes or until garlic is lightly browned.
