Curry Chicken Salad
I love the curry in this recipe.
2 1/2 - 3 cups deboned rotisserie chicken
1/2 cup veganaise or mayo
1 T sour cream
1 t dijon mustard
2 t curry powder
1/2 t monk fruit
1 T lemon juice
1 t red pepper flakes
2 T finely diced shallot, or red onion
2 stalks celery, finely chopped
4 - 6 snacking peppers, finely chopped
1 handful matchstick carrots
salt & pepper to taste
1/4 c sliced almonds, toasted, to sprinkle on top of chicken salad
Debone 2 1/2 - 3 cups of rotisserie chicken, set aside.
Grab a medium size bowl and add remaining ingredients, mix well. Add chicken, mix well. You may add more veganaise if you like a more moist chicken salad. I like mine, on the dry side. Serve on a bed of spinach with crackers and enjoy!
Store in air-tight container in fridge.
