Frosted Pumpkin Cake
A family favorite.
2 cup flour
1 t baking soda
2 t baking powder
1/2 t salt
2 t cinnamon
1/2 t powdered ginger
1/2 t ground cloves
1/2 t ground nutmeg
4 eggs
1 cup veg. oil
1 cup sugar
1 15oz can pumpkin
1 t vanilla
Crean Cheese Frosting
8 oz cream cheese, room temp
1/2 c butter, room temp
1 t vanilla
1 T milk
4 c powdered sugar
Preheat oven 350.
For the frosting beat the cream cheese, butter, vanilla and milk. Add the powdered sugar one cup at a time, blending between additions. Add more milk if necessary. Set aside.
Sift together the flour, baking soda, baking powder. salt and spices. Set aside. In a separate bowl, beat together, eggs, oil, sugar and pumpkin. Gradually add the dry ingredients and blend well. Pour batter into a ungreased jelly roll pan ( 17x12x1 ) and bake at 350 for 15-20 minutes. Let cool in the pan and frost once completely cooled.
