Lemon Bars
Not the prettiest picture but these Lemon Bars are tart, rich and delicious.
(1st half ingredients)
1 c butter, softened
1/2 c sugar
2 c flour
1 tsp lemon zest
add a pinch of salt
(2nd half ingredients)
4 eggs
1 1/2 c sugar
1/4 c + 1 T flour
2/3 c lemon juice, about 2-3 lemons
zest 1/2 a lemon
Preheat oven 350.
In a medium bowl, blend together 1st half ingredients with hand mixer, bend well. Press crust into the bottom of an ungreased 9x13 pan, lined with parchment paper.
Bake for 15-20 minutes, or until firm and golden.
In another bowl, whisk together 2nd half of the ingredients, mix well. Pour over the baked crust. Bake for an additional 20 minutes.
The bars will firm up as they cool. Once bars have cooled dust with powder sugar and enjoy!
