Caramel Popcorn

On Friday, my son's school has "Popcorn Friday." Each class takes turns selling popcorn to the parents and children during pick up time. The children and parents look forward to Friday for this special treat. The children help sell the popcorn for a $1.00 or any donation per bag. This is profitable for the children/teachers because the proceeds go towards supplies for that particular classroom.

We have a very generous mom, Janee' Myers - the school's PE teacher/librarian, who donates 25 bags of her homemade caramel popcorn. Let me tell you, this popcorn is gooood! It sells quick and everyone loves it. On my days to help with Popcorn Friday, I come home with a couple of bags. I will blow my healthy eating just for 1 small bag of this popcorn. I was amazed at how delicious this popcorn is, and how easy. The popcorn is light, crisp, sweet and melts in your mouth delicious. It is a great addition to any upcoming parties.

Caramel Popcorn
Janee' Myers

1 cup butter
2 cups brown sugar
1/2 cup corn syrup
1tsp. salt
1/2 tsp. baking soda
1 tsp. vanilla extract
5 quarts popped popcorn (20 cups)

Preheat oven to 250. Place popcorn in a large bowl. In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring 4 minutes. Remove from heat and stir in soda and vanilla. Pour in a thin stream over popcorn, stirring to coat.

Place in two large shallow baking dishes and bake in preheated oven, stirring every 15 minutes, for 1 hr. Remove from oven and let cool completely before breaking into pieces.

  1. My kids will definitely enjoy this! I usually make sweet and salty butter popcorn for them. I buy my caramel popcorn at my local farmers market. Glad to have found this recipe to make my own caramel popcorn.

  7. You just found my one true weakness. I am addicted to carmel popcorn. My parents used to make some from Orange Crush that is THE BOMB. I'll have to get that recipe.

  9. Ahhh, that looks so good. I keep staring at boxes of caramel popcorn at the checkout of Walmart, thinking "No, don't buy that, you could make caramel corn" But I have never made it! I'm definately going to make it now that I've found this yummy recipe! Thanks

  14. Caramel popcorn is the perfect sweet-tooth snack that also satisfies my savory-tooth as well. It's highly addictive in my opinion and yours has my mouth watering!

  15. I have many downfalls...this is one of them. I especially like getting it at one of the little shops n the pier and walking around while it is pipping hot and the fog is rolling in.
