Green Chile Potato Soup

Green Chile Potato Soup



This is the perfect bowl of soup for a cold rainy night. Simply delicious. 



3 T olive oil
1 small onion, diced
2 garlic cloves, chopped
1/2 t cumin
1/4 -1/2 t salt
1/4 t black pepper
pinch of oregano
3 medium potatoes, diced
2 chicken thighs, cooked & chopped
2/3 c hatch green chilies
5 c chicken broth

Cook onion & garlic in oil over low heat for 5 minutes. Raise heat to medium, stir in cumin, salt & pepper, and stir 2-3 minutes until onions start to brown. Then add broth and chicken, bring to boil and simmer for 30 minutes. Then add potatoes and cook for another 15 or so minutes till potatoes soften. Serve with cheese, sour cream, cilantro and avocado.
