Fig Jam
Simple and delicious.
2 pounds of figs, stemmed and quartered
3/4 c coconut sugar or granulated sugar
1/2 honey
juice of 1/2 a lemon
healthy splash of vanilla
Place the figs, sugar, honey and lemon juice in a large sauce pan and heat over med-high heat, stirring to combine as the sugar melts. Bring to a boil, then reduce heat to medium and cook until thickened, about 30-45 minutes. Stir pan often to prevent sticking and/0r burning, especially as the mixture thickens.
Remove from heat and stir in vanilla. Coot completely.
Store in an air tight container in the refrigerator for a few week.
