Orange Cardamon Muffins
These muffins don't look like much but let me tell you, they're delicious.
The cardamon has a slight peppery taste with hints of citrus that pairs well with the orange zest.
3/4 c sugar
2 eggs
1/2 c avocado oil
1/2 c milk
1/4 c orange juice
zest of 1 1/2- 2 oranges
1/2 t vanilla
1 t ground cardamon
2 c flour
2 t baking powder
1/2 t baking soda
1/2 t salt
3 T course sugar
Preheat oven 350 and line muffin pan, with muffin pan liners.
Whisk together all the wet ingredients, whisk well.
In a separate bowl, whisk together the dry ingredients, then add to the wet ingredients and fold everything together until there are no dry bits of flour left.
Pour batter into prepared muffin pan, and top with course sugar.
Bake for 20-22 minutes until risen and starting to tuen golden brown around the edges. A toothpick inserted onto the center of a muffin should come out without we batter clinging to it,
Makes about 10-12 muffins, depends on how full you fill the muffin pan.
